Methi(Fenugreek) Roti with Seasoned Mashed Potato

Roti:
Flour Mix :
Whole Wheat Flour - 2 cups
Dried Methi(fenugreek) Powder (or) Fresh Methi Leaves – ½ cup
Salt – As per Taste
Oil – 1Tbsp
Water – As Required
Preparing Dough :
1. In a mixing bowl add wheat flour, methi(fenugreek) powder or Fresh methi leaves, salt and oil and mix well
2. Add water in small amount and prepare the Dough.
3. Divide dough into small portions and make roti.
4. Heat on a pan with oil.

Seasoned Mashed Potato :
Ingredients :
Potato’s – 5 Medium Sized (Boiled and peeled)
Green Chilli’s – 5-6 (chopped)
Ginger – 1 inch (chopped)
Salt – As per taste
Lemon – 1
Turmeric – ¼ tsp
Curry Leaves
Coriander
For Seasoning :
Oil – 2 Tbsp
Mustard Seeds – 1 Tbsp
Black Gram – 1 tsp
Split Peas – 1 tsp
Broken Red Chilli – 1

Preparation :
1) In a bowl take Boiled and peeled potatoes , mash them and add pinch of turmeric and salt and mix well
2) In a pan heat oil, add seasoning and allow to fry
3) Once they turn golden brown and chopped ginger and fry
4) When ginger gets roasted add green chilli and curry leaves and fry
5) Next add mashed potato mixture and mix well
6) Turn off heat after two minutes and add lemon juice and fresh coriander and mix well
7) Serve with Methi(fenugreek) roti
